Dan's Fav Enchiladas


Ok, Chels....I'm a bad friend. I told you I would give this to you like...3 months ago. Sorry. So here it is...

This is Dan's Favorite meal I make. They are incredibly fattening...but sooooooo delicious.

4 chicken breasts
1 bullion cube
2 TBS olive oil
1-4 oz can of green chillies
1 jalepeno' pepper diced (You can do less or more depending on your spice preference)
1/4 c diced onion
1-8oz pkg of cream cheese
1 1/2 cup of monterey jack cheese
1/2 cup water
10 tortillas
1 cup heavy cream
1/2 cup monterey jack cheese
1 cup enchilada sauce


1)boil chicken breasts in water with the bullion cube (I have also cooked the chicken in a crockpot in enchilada sauce or salsa. That made it really good and tender) then shred!
2) Saute the following ingredients in the olive oil- green chillies, jalepeno pepper, and onion. ( To make it Cody friendly you could blend it with some cream cheese after they are sauteed?)
3)Then in a pot combine all the previous ingredients. Add the cream cheese by the spoonful until melted. Then start adding the monterey jack cheese. After that is melted add the water.
4)Stuff the tortillas with your mixture and put them in a cake pan. Top with heavy cream, cheese, and enchilada sauce.
5)Put them in the oven at 350 and wait for everything to get hot, and for the cheese to melt. (Dan likes me to cook them a little longer than I usually would because he likes the cheese crispy.)
6)serve with whatever mexican toppings you like....sour cream, olives, green peppers, tomatoes, salsa, rice ect.....

YUM!!!

FINALLY!!!! I can't wait to make them! yum, yum, and yum. (U aren't a bad friend, just a really slow at getting me the recipe friend!)

I am a little confused...do you cook them after everything is in the pan? Your look cooked. This sounds amazing!
